Healthy Avocado Sourdough Toast with Tobiko and Cilantro


This is one of my all time favorite breakfasts. Have you tried avocado toast yet? It's creamy and savory, crunchy and toasty!

I like to use a hearty bread and since I usually have some sourdough from the day before that's what I prefer to use. Today I chopped my avocado into chunks and tossed it with the juice of one lime wedge while the bread was toasting.


I buttered the toast very lightly then added the creamy chunks of avocado, a sprinkling of tobiko and then a scattering of cilantro over the top.


I eat one handful of almonds most mornings so I added a lime wedge and they are my side garnishes today.

Done! This is so quick and easy. I prep everything while the bread is toasting then pile it on and eat.

It's filling and has just the right combination of protein, healthy fats and carbs to keep me going for a long time. And just think of all the antioxidants that this breakfast delivers!

Of course this makes a yummy lunch as well as a great appetizer course or party tray food. This would be awesome on little sourdough rounds for a cocktail party.

Ah well, today it is the breakfast of champions!

Ingredients (one serving)

1 large piece of hearty sourdough bread

1/2 of one large avocado diced

2 lime wedges

1 1/2 tablespoons tobiko (flying fish roe)

1 1/2 tablespoons chopped cilantro

1/2 tablespoon butter

Method

Start toasting the slice of bread. Meanwhile chop half of an avocado and top it with the juice of one wedge of lime. When the toast is ready, lightly butter it and then top it with the avocado, tobiko and cilantro. Serve with a lime wedge and salt and pepper if desired.
