GMG Smoked Pulled Chicken


Slow smoked whole chicken with Our Favorite Barbecue Dry Rub is shredded or pulled off the bone with forks and fingers. That's how it gets it's name.

Use the smoked pulled chicken for sandwiches, stir-fries, salads and awesome tacos!

This recipe is for smoking one whole chicken in a Green Mountain Grill but of course you can adapt this using whatever smoker you have. I love our new GMG! It's so simple to use and everything I've made has come out so juicy and tender it's amazing.

Superman sliced up this perfectly moist chicken breast for our first meal then I pulled the rest off the bones and shredded it up for a quick stir-fry and a sandwich over the next few days.

I've been cooking for just myself a lot lately because my husband has been traveling back and forth to the snowy North to take care of our property up there and get it all spiffy to go on the market April 1st. No Fooling!

The first Leftover Queen creation was a pulled chicken sandwich. I added just a touch of Texas style barbecue sauce to finish it.


Pulled smoked chicken, sharp aged white cheddar, arugula and mayo on a beautiful ciabatta roll. 😋Oh Yeah!

For this Leftover Queen dish, I used some steamed carrots and broccoli that I had on hand and stir-fried them with some of the smoked pulled chicken. I added some Kalbi Barbecue Sauce and served it over brown rice. You can use a store bought sauce like I did for this or you can make your own. Try my Simple 20 Minute Korean BBQ Sauce.

GMG Smoked Pulled Chicken

Ingredients

1 whole Chicken

4 tablespoons of Our Favorite Barbecue Dry Rub

3/4 can of your favorite beer

Method

Start your smoker and set it to 200 degrees.

Clean, rinse and pat dry one whole chicken and season it generously with 4 tablespoons or so of Our Favorite Barbecue Dry Rub or one of your own.

Place the open beer can (3/4 full) in a beer can chicken stand on a disposable roasting pan and then set your chicken on top of the can. Carefully place the whole thing into the smoker, insert a temperature probe and close the lid.

Smoke the chicken until the thermometer reading for the chicken breast reads 165. Approximately 4-5 hours depending on the size of your chicken.

Remove the chicken from the beer can stand and cover with foil to rest for at least 15 minutes. The longer it rests, the better!

Enjoy juicy slices of breast and tender dark meat as is or pull the meat off the bones and shred the breasts. I like to do this using two forks.
