Best Brownies Ever! I first ran across this recipe at Life In The Lofthouse a few years ago and it's been a staple in our house ever since. Every time I make some I send a few over to the neighbors. Dawn just loves them, so this blog is for you Dawn!

Many years ago when I first started school we had the best lunch ladies. They came to school early in the morning and made so many wonderful things but one of the very best things they made was dessert. Hands down, lunch lady brownies were the best!

Now I have met some people who disagree and say they don't have memories of these delectable treats. This makes me sad because they were truly missing something.

This recipe has been around for more than 50 years, tried and true.

 

I just wanted to make sure ya'll got a copy of it because it's the best frosted brownie recipe there is and everyone should have a great brownie recipe in their pocket. Especially my sweet friend Dawn.

Lunch Lady Brownies

Ingredients

​

For the Brownies

​

1 cup butter, melted

½ cup unsweetened cocoa powder

2 cups all-purpose flour

2 cups granulated sugar

4 large eggs

4 teaspoons vanilla extract

For the Chocolate Frosting

​

¼ cup butter, softened

¼ cup milk 

¼ cup unsweetened cocoa powder

3 cups powdered sugar

Method

​

Preheat your oven to 350 degrees then line a 9 x 13-inch baking dish with foil and spray foil with non-stick spray. Now set these aside.

​

In the bowl of an electric stand-mixer, or in a large bowl, add the melted butter and cocoa powder. Using the paddle attachment, a hand mixer or a whisk (as I did this time), blend until just smooth.

​

Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined. The batter will be very thick. I used a spatula to remove the batter from inside my whisk.

​

Pour the batter into the prepared baking dish and spread it out evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Remove brownies from the oven and let stand 15 minutes before frosting. It's important for the brownies to be warm when you frost them.

FOR CHOCOLATE FROSTING: Beat together all the frosting ingredients until smooth. Pour and spread over warm brownies. Let cool completely before cutting and serving.
