Smoked Pork Loin Sliders
Cheesy smoky lean pork smothered in garlicky arugula. These smoked pork loin sliders are full of juicy flavor so make sure there are plenty of napkins around, things might get a little messy.

This recipe is something I like to make the day after I've made my Slow Smoked Pork Loin Roast.
​
The thing about cooking a pork loin roast is that there are almost always leftovers unless you are cooking for a party. That means I get to make a meal out of it again that will take only minutes, like these Smoked Pork Loin Sliders, Smoked Pork Loin Gyros or a Smoked Pork Loin Stir-fry.

It's so easy to saute the greens, toast the buns and put these little guys together!

Smoked Pork Loin Sliders
Ingredients
​
8 slider buns
1 stick of butter
2 large Tillamook cheddar slices
2 large Swiss cheese slices
salt & pepper
3 cups baby arugula or spinach
2 cloves minced garlic
2 tablespoons good Olive Oil
Slow Smoked Pork Loin sliced thinly

Method
​
Saute the Arugula or spinach gently in the olive oil with the minced garlic and season with salt and pepper.
​
Butter the insides of the buns and grill them on a flat cast iron pan until toasty.
​
Move bottom buns to a shallow glass casserole then place a 1/4 slice of each cheese on the bottom of each bun. Top the cheese with slices of Slow Smoked Pork Loin Roast, then the top of the bun.
​
Warm the sliders in the oven set to 325 degrees for 10- 15 minutes or so until the cheese begins to melt and the pork warms up.
​
Remove the tops and add some of the sauteed greens. Put the tops back on the sliders then serve immediately.
