Mike's Mad Good Granola

Baked so it's toasty like granola but much more loose and naturally chewy like muesli without all the dried fruit. Mike likes to top his granola off with fresh blackberries, strawberries and bananas. It makes a great bowl with milk or yogurt.

This stuff is so good and chock full of things that are mad good for you. Most granola from the store contain for more fats and sugars than we wish they did so why not make some at home with less of the things you don't want? This is a simple and quick way to really do something good for yourself!

I started developing this granola recipe when it became difficult for me to find Mike's favorite granola on the shelf at our local grocery stores. This granola was something he really loved so I thought I should make an attempt to copycat it. Perhaps even make it a little more to his liking? Now he has a new favorite granola and it's even lower in sugar and higher in nutrition and fiber so that makes me happy too!




Mike's Mad Good Granola


4 cups old fashioned whole oats (not instant)

½ cup flaked coconut

½ cup sliced almonds

¼ cup roasted unsalted sunflower seeds

¼ cup flax seeds

2 tablespoons chia seeds

¼ cup dark brown sugar

1 heaping teaspoon cinnamon

5 Tablespoons honey

4 Tablespoons coconut oil (melted)


Add all ingredients to a large bowl except the honey and coconut oil.

Stir very well to incorporate all ingredients evenly.

Add honey and oil and stir well again for about 5 minutes or until you have all of the granola coated with the honey and the oil. It may not seem like enough but give it time and it will distribute perfectly.

Pour the granola out onto two ½ baking sheets. I like to line mine with parchment for easier clean up.

Bake at 300 degrees for 30 minutes, tossing the granola and rotating the baking sheets halfway through.

Cool completely and store in an airtight container. I use a 1 1/2 quart plastic juice container. It holds exactly this quantity and pours easily.
