Strawberry Granola  Whipped Cream Parfait

Here's a simple sweet refreshing dessert filled with delicious real ingredients. Homemade whipped cream, fresh ripe strawberries and crunchy toasted granola parfaits are a quick treat for any occasion.
I make this mad good granola for my husband each week so it's always on hand in my pantry, whipping up the cream and slicing strawberries is super fast but if your throwing a party you can prep these ingredients up ahead of time.
I love serving these in wine or martini glasses. Stemless wine glasses are super cute too!
The strawberries can be macerated by adding a little sugar to get the juices flowing or they can be left refreshingly fresh!

Make ahead tips:

 

These pretty parfaits can be made ahead of time up to 4 hours or so. The granola will eventually become moistened if left too long. If you need to prep this more than 4 hours ahead of time, prepare the whipped cream, granola and strawberries then store them separately in the refrigerator. They can be assembled in just minutes right before serving.

Strawberry Granola Whipped Cream Parfait

Ingredients

4 to 6 servings

 

2 cups fresh strawberries

1 tablespoon sugar (optional)

4 small sprigs of mint 

1 cup heavy whipping cream

3 tablespoons sugar (or more to suit your taste)

1/2 teaspoon vanilla

1 1/3 cups Granola - I used my recipe - Mike's Mad Good Granola

 

Method

Clean and slice the strawberries. Reserve one strawberry to top each parfait. Stir in the 1 tablespoon of sugar if using and set aside.

Add whipping cream, vanilla and 3 tablespoons of sugar (or more to taste) to a stand mixer and whip until soft peaks form.

Alternately layer the whipped cream, granola and strawberries in a pretty glass. Top the parfait with one sliced, fanned strawberry and a sprig of mint.

Serve immediately or refrigerate until ready to serve up to 4 hours.
